Is all beef created equal?

The Beef Grading System determines the quality of beef based upon a very complicated inspection system. The texture, tenderness, juiciness and flavor is developed by the fat marbling and age of the beef. Younger beef produces a finer texture and a lighter red color. The higher the ratio of marbling to the age of the beef, the higher the grade.

Prime Beef

Anyone who has savored a USDA Prime Graded Steak knows that it is delightfully tender and juicy with a buttery flavor, making it distinctively superior to any other steak. Of all the beef produced in the United States, less than 2% is
certified as USDA Prime. Typically you will not find USDA Prime in supermarkets, because its limited supply is gobbled up by fine meat purveyors that retail it to upscale restaurants or “boutique” butcher shops, like Palmer’s.

Choice Beef

Sixty percent of all graded beef in the United States is Choice. This is the beef most of us buy at the supermarket. There are different qualities within the Choice grade. There is the beef that just missed the Prime grade; you can think of it as the B+ quality. Then there’s the beef that just missed the Select grade, we’ll call it the B- quality. BIG DIFFERENCE! At Palmer’s, we carry only the top “B+” Choice beef. As Master Butchers, we know our beef! We don’t nickel and dime our suppliers for the cheapest price; we look for QUALITY and won’t accept anything less.

Palmer's Market started as a Butcher Shop back in the 1920s and since then we've been providing the finest quality meats and poultry. Our four excellent butchers have a combined 80 years experience and are ready to answer your questions and to serve your needs.

We offer only USDA Choice & Prime Beef in addition to Supreme Angus and Natural Choice Beef which is guaranteed free from antibiotics, pesticides and steroids.

Our ground beef is prepared fresh daily on our premises from our trimmings. You will never find processed ground beef at Palmer's.

We select only the finest milk fed veal of which our butchers have been meticulously trained to trim and slice properly. Again, no pre-sliced processed veal is used at Palmer's.

In our poultry section we carry Purdue, Bell & Evans and Murray's All Natural Chickens. We guarantee that our poultry is fresh! We also offer Plainville Farms Veggie Grown All Natural Turkeys and Turkey products.

Specialty meat products from North Country Smokehouse, Hormel, John Morrel, Schaller & Weber, Lloyds, De Yulios and Al Fresco Chicken Sausage.

 


Select Beef *

This is generally a lower priced grade of beef with less marbling than Choice. Select has the least amount of marbling, making it leaner than, but often not as tender, juicy and flavorful as the other two top grades.
